Lentils, for the faint of body

Today my daughter woke energized and hungry after a week long bout with the flu. Hmm, what to make for my little darling? Perhaps Lentils vert du Pay served over rice? One thing that makes these lentils a staple in my kitchen, besides being delicious, is that they cook quickly and require little more than olive oil, salt, and chopped fresh herbs to make a simple and satisfying meal.

Lentils vert du Pay

  1. 2 cups lentils
  2. 2 stalks celery, washed and finely sliced
  3. 3 carrots,  scrubbed and finely diced
  4. 2 bay leaves
  • Place all ingredients in a pot.
  • Cover with 2 inches of water
  • Cook over medium heat for about 25 minutes
  • Check often for water (depending on the age of the lentils, more water may be required to hydrate)
  • Once done, salt to taste

This simple lentil pottage can be eaten as is, over rice, or with a crusty bread. Enjoy and be well!
